Mixed Greens with Bell Pepper, Shallot, and Spicy Pistachio Dressing

This is a very quick and easy salad to throw together which can make the perfect compliment to any dinner such as a grilled protein.

Feel free to use regular pistachios instead of the green chili garlic variety listed in the recipe.  I happened upon these at Natural Grocers since the regular pistachios came in a much larger bag and I didn’t want a lot of extra to go to waste.  Also if you want to experiment with your own version use the following ingredient listing from package: pistachio nuts, green chile, salt, garlic, red chile powders.  Please add a comment below if you find a ratio that works really well!

 

Mixed Greens with Bell Pepper, Shallot, and Spicy Pistachio Dressing

Serves: 2-4

Instructions

Begin by dicing the bell pepper[1] into approximately 1/4" cubes and placing in small bowl.  Now peel and mince the shallot[2] and add to the same bowl as the pepper.

Remove the shells from approximately 40 pistachios and add to a blender with the juice from 1 lemon, 1/4 cup EVOO, and a pinch of salt.  Blend on high until dressing is fully combined.

Wash mixed greens and place in large salad bowl.  Next add bell peppers and shallots.  Drizzle entire contents of the dressing over salad and lightly combine using your hands or salad tongs.  Serve immediately.
