Mixed Greens with Grilled Chicken, Veggies, and Asian Dressing

Here in the Midwest you don’t have to be a Stark to know that Winter is coming.  However if you are anything like me this doesn’t prevent you from utilizing your grill and that is why you will notice grilling recipes continue to flow from this blog at any time of year.  I do realize that not everyone shares this philosophy so any time you see a recipe for grilling feel free to swap in your favorite cooking technique.  I would hate for you to skip some of these recipes just because of the time of year.

Here is a pretty solid video showing the technique of pan roasting chicken breast.

For this recipe I’d also advise sauteing the green beans and onions.

Mixed Greens with Grilled Chicken, Veggies, and Asian Dressing

A quick and easy slow carb salad inspired by Asian flavors.

Serves 4-6

Ingredients

Start the grill. Using kitchen scissors cut the stems off the green beans, halve, and
add to a large bowl. Slice the onion[1] and add to the same bowl. Lightly coat with
EVOO, salt, and pepper and then add to a grilling basket. Lay out chicken breasts and
lightly sprinkle with salt+pepper. Depending on your grill setup you may be able to
start grilling the veggies and meat while you prepare the rest of the recipe, for the
first time though its probably easiest to finish prepping before you begin using the
grill. Dice the bell peppers[2] and cucumbers[3] and place in small container.

To a blender/food processor add 3/4 cup extra virgin olive oil, 1/4 cup rice wine
vinegar, juice of 1 orange, tbsp of chili paste, 1/3 cup of cashews, finely chopped
garlic cloves (optional) and a pinch of salt+pepper. Blend on high until all
ingredients are combined then pour into small jar.

After veggies and chicken are finished grilling dice the meat into bite sized chunks
and combine chicken, veggies, mixed greens, and the dressing in a bowl to serve
immediately. If some servings will be saved for leftovers refrigerate in containers of
the following: chicken, onions+green beans, peppers+cucumber, mixed greens, and
dressing in jar.
